When the sun starts shining, and spring begins to make an appearance, I always find myself reaching for refreshing sippers like a classic gin & tonic, or a mint mojito.

But lately, there is a new co*cktail that’s finding its way to our co*cktail shaker more and more these days – the Bramble.

What is a bramble co*cktail?

The Bramble co*cktail was created in London in the 1980’s. A perfect blend of sweet and sour, it is traditionally made with gin, lemon, simple syrup, and crème de mûre (a blackberry liquor).

Since I didn’t have any crème de mûre on hand (and I’m guessing most of you don’t either), I decided to create a blackberry simple syrup and swap that in its place.

Best decision ever.

With this Bramble co*cktail recipe, what really shines are those delicious Oregon blackberries.

Fresh or frozen blackberries will work in this recipe. In the summer, we’re lucky to have fresh blackberries growing in our backyard, but they normally don’t take off until late in the season. So, I always have a bag of frozen berries on hand in the freezer.

Fun Fact: Did you know that more than 90% of U.S. grown, frozen blackberries are from Oregon? With the perfect, fertile soils, warm days and cool nights, Oregon produces the most perfect berries.

How to make it

  • First, make the blackberry simple syrup, by bringing water, sugar and blackberries to a boil. Simmer until the sugar dissolves then cover the pot and let it steep for 15-minutes. Strain the blackberries and let the syrup cool completely.
  • To make the bramble co*cktails, add gin and lemon juice to a co*cktail shaker filled with ice. Shake well and strain into a rocks glass filled with ice. Drizzle the blackberry simple syrup over the top and enjoy!

How to make a blackberry bramble mocktail

If you’re not a drinker, this could easily be made into a non-alcoholic bramble by leaving out the gin and combining the lemon juice and blackberry simple syrup with a splash of ginger ale, ginger beer, or sparkling water. Essentially, a Blackberry Sparkling Lemonade.

Ingredients

Blackberry Simple Syrup:

  • 1 cup sugar
  • 1 cup water
  • 1 cup Oregon blackberries

Blackberry Bramble:

  • 2 ounces gin
  • 1 ounce lemon juice
  • 1 1/2 ounces blackberry simple syrup

Mocktail:

  • 1 ounce lemon juice
  • 1 ½ ounces blackberry simple syrup
  • Soda water (ginger beer or ginger ale, for topping)

To Garnish:

Blackberry Simple Syrup:

  • In a medium saucepan stir together water, sugar, and blackberries. Bring mixture to a boil, then reduce heat and let mixture simmer until sugar completely dissolves. Remove from heat, cover, and let steep for 15 minutes.

  • Strain blackberries from syrup mixture and let cool completely.

Blackberry Bramble:

  • In a co*cktail shaker filled with ice, shake together the gin and lemon juice and strain into a rocks glass filled with crushed ice. Drizzle the blackberry simple syrup over the top and garnish with a lemon wedge and blackberries. Enjoy!

Mocktail:

  • Add lemon juice and blackberry simple syrup to a rocks glass filled with ice. Top with soda water, ginger beer or ginger ale. Enjoy!
